Kale & Roasted Sweet Potato Salad

Ingredients

2 cup kale, chopped

1/2 cup sweet potato, chopped

1/2 tsp olive oil, (used to roast the sweet potatoes)

1/2 cup apple, chopped

1/4 cup soft goat cheese, crumbled reduced fat soft

1 Tbsp chopped almonds

2 Tbsp light balsamic dressing

1 hot sauce (to test)

Directions

In a large bowl, combine kale, sweet potato, apples, goat cheese, and almonds. Drizzle with dressing and hot sauce, if desired. Gently toss to combine. Serve immediately.
